Caption: UK Mushroom Sets New Bitter Benchmark. Scientists have identified the most bitter-tasting substance ever—found in a mushroom growing in the UK and Ireland. The mushroom, called bitter bracket or Postia stiptica, contains compounds more bitter than anything previously recorded. Researchers at Germany’s Leibniz Institute extracted and analyzed these compounds to better understand how we perceive bitterness. While much is known about bitter compounds in plants, mushrooms like these have been far less studied. Interestingly, bitterness doesn’t always mean danger: some toxic mushrooms taste mild, while intensely bitter ones can be safe to eat. Animals, not just humans, eat mushrooms—and their ability to detect toxins might be more finely tuned than ours. The mushroom’s compounds were found to activate one of our 25 bitter taste receptors—some of which exist not just in the mouth, but also in the gut, heart, and lungs.
